This cookie cookbook rocks.
It has classic cookie recipes like chocolate chip cookies and oatmeal cookies
but it also has some crazier recipes like candied ginger sugar cookies and PB&J cookies.
This weekend, I decided to go with a crazy recipe.
Candied Orange and Pistachio Cookies
Yum.
These cookies are what spurred on the candied orange peel making that I blogged about yesterday.
Was it worth all the work?
Definitely.
Ingredients
2 1/4 cups flour
1/4 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup butter
3/4 cup granulated sugar
3/4 cup light brown sugar
2 large eggs
1 tbsp vanilla extract
1 1/2 cups bittersweet choc chips
2 tbsp Grand Marnier liqueur
1 cup pistachios
3 tbsp candied orange peel
Directions
Mix flour, cocoa, soda, and salt together in a small bowl.
In another bowl, mix butter and sugars together.
Add in the eggs, vanilla extract, and Grand Marnier.
Slowly stir the dry mixture into the wet mixture.
Mix in the choc chips.
[I used semi-sweet and it was a little too sweet - bittersweet is the way to go]
Fold in the pistachios and orange peel but save some for making the cookies look pretty!
[I ended up with extra pistachio and orange by chance but was really glad to have it. Once you mix everything together, the orange and green get lost in the dough since it's so dark. If you have a little extra you can place them on top of the cookies before they go into the oven.]
Bake at 350 for 10 minutes.
The result?
Chocolaty, soft-in-the-middle, orange-nutty, deliciousness.
