Today's Fun Friday lunch took us to Bishop Arts to try the brand new Dallas Grilled Cheese Co.
I ask you: does life get better than bread and cheese?
I think not.
The sandwiches come out on wax-paper-covered metal trays - cute presentation! Both of my selections were absolutely delicious. The grilled cheese was toasted to perfection and the gooey inside was wonderful. The PB&J was surprisingly good and and felt just like dessert.
Next time I think I want to try the Caprese (grilled sourdough with fresh mozzarella, tomato, basil, and pesto) or JK's Favorite (sourdough with American, cheddar, and Gruyere cheese, crumbled bacon, and dijon mustard). Or I may just end up getting the exact same thing again!

We arrived with a group of 8 people right at noon, after spending about 10 minutes looking for parking. The parking situation is always tough in Bishop Arts! The hostess told us it would be a 30-40 minute wait for a table for all 8 of us, or we could split into a few groups and be seated right away. We opted to do the latter and found our tables.
The atmosphere is fun and casual. The decor is fairly modern with cute wood tables, concrete floors, and exposed ductwork. I wouldn't recommend coming with a big group as most of the tables are 2 or 4-seaters.
We perused the menu, which was pretty substantial in my opinion: a plethora of appetizer options, salads, soups, and of course: almost 10 variations of grilled cheese sandwiches.
I just love their philosophy on cheese:
After a recommendation from a friend, I decided to go with a classic grilled cheese - just bread and cheese. I know, it doesn't sound incredibly adventurous, but trust me - it was a great choice! Instead of fries, chips, or onion rings as a side, I decided to go with a half a grilled PB&J (yes, basically 1.5 sandwiches - it's okay, the baby wanted it!).The atmosphere is fun and casual.
