Meal Planning - Week of 3/31

This weekend we took some time to meal plan for the week ahead (just like we did last week). Here's what's on the menu for this week:

Monday
Breakfast: Fresh juice & a healthy carrot muffin
Lunch: Weekend leftovers
Dinner: Southwestern Chicken Salad

Tuesday
Breakfast: 1 Egg with sauteed spinach & tomatoes and a piece of buttered sourdough toast
Lunch: Leftover Southwestern Chicken Salad
Dinner: Tilapia with Peppers and Olives (over brown rice)

Wednesday
Breakfast: Smoothie
Lunch: Work lunch
Dinner: Quinoa Stuffed Peppers

Thursday
Breakfast: Fresh juice & a healthy carrot muffin
Lunch: Quinoa Stuffed Peppers
Dinner: Steak Salad

Friday
Breakfast: Starbucks + pod breakfast
Lunch: Lunch out with coworkers
Dinner: Dinner out with friends!

Snacks (rotated throughout the week): Greek yogurt, Almond Beauty Bars, oatmeal, carrot muffins, almonds & craisens, and sesame crunch bars.

Aaaand this is what our fridge looks like after we grocery shop for the week - packed to the brim!
